Ingredients

16 oz (1lb) chicken breast
4 whole wheat hamburger buns
12 oz BBQ Sauce (I'm using Mr. Cecil's mesquite, but you can use whatever you'd like).
Ingredients for Cooking, Not Consuming
5 cloves of garlic
1 whole white onion quartered
2 bay leaves
1 tablespoon dried cumin
salt and pepper to taste
Directions
Serving Size: 6 Sandwiches
Combine the chicken,onions, bay leaves, cumin and optional spices in a saucepan and add water to cover. Turn heat to high, bring to a boil, and skim any foam that comes to the surface. Partially cover and adjust heat so mixture simmers steadily. Cook until meat is very tender, about 30 minutes. Remove from liquid and cool. Discard onions, garlic, bay leaves, spices and water.
Shred meat with fingers. Pour in barbecue sauce and toss (stir) so that the chicken is coated evenly. Taste and adjust seasonings; use within a couple of days. Serve on whole wheat hamburger buns or bread.
