1/2 package of low sodium turkey bacon
1/4 cup vegetable oil
4 cups frozen hashbrowns
10oz of Frozen chopped broccoli
1 bell pepper(any color)
8 large eggs
1cup fat free evaporated milk
1/2 tsp salt
1 cup shredded cheddar cheese
Directions
cook bacon in skillet 4 to 6 min. cook hashbrowns for 3 to 4 min turn and add vegetables and oil cook 3 to 4 minutes more.
whisk eggs together with milk and salt. Stir in cheese and cooked bacon. pour over potato mixture spread in pan.
bake uncovered for 40 to 45 minutes at 350
