Ingredients

Calories per serving : 800 - 900 Cals
Directions
1. Heat oil in a pan
2. Add mustard seeds and allow it to splutter.
3. Add curry leaves (if you find some),chopped ginger and green chillies.
4. Add any nuts or seeds of your choice to add some crunch to it. (just a tsp) and fry everything together for just about a minute
5. Now, add chopped onions and stir it until it loses it color. Don't allow it to brown. You wanna keep the crunch of onions when you eat!
6. Then add diced tomatoes and diced bell peppers. Stir them for 2 minutes.
7. Add turmeric powder (optional) and salt to taste.
8. Add half a cup water to the mixture.
9. Add bread pieces (diced into cubes) to it and keep stirring until you get a mushy texture to it.
10. For a toasted effect, simmer the stove and occasionally stir the bread so that they get toasted well.
11. Garnish with chooped cillantro.
You could:
Add a cup of soft tofu (smashed) to it while stirring tomatoes and bell pepper. They don't add any additional flavor or taste but just adds protein to your meal.
Add your favorite herbs (thyme/rosemary/basil) to have your customized flavor!
