Introduction

I like this salad so much that the reason I made it today was that I was craving it last night. I like this salad so much that the reason I made it today was that I was craving it last night.
Number of Servings: 4

Ingredients

    1 c. dried black-eyed peas
    1/2 c. minced red onion
    1 can tuna, packed in water
    3 TB red wine vinegar
    1/4 c. olive oil
    1/4 c. parsley, minced
    salt and pepper to taste

Directions

Place peas in a saucepan, cover with water and soak for 4 hours. Drain, re-cover with water and boil 1/2-1 hr. until soft. Drain and cool. Mix in onions and tuna. Mix vinegar, salt, pepper, and parsley; add oil. Pour dressing over salad.
