Ingredients

    2 cups brown rice, cooked
    2 eggs, scrambled
    1/2 onion, chopped
    2 cloves garlic
    1 carrot, diced
    1 cup cabbage, chopped
    1 tbsp. Olive oil
    1 tbsp. soy sauce

Directions

Saute onion, garlic and carrots in olive oil until transparent. Add cabbage and continue to saute until soft, yet crisp. Add rice and blend well. Add soy sauce and continue stirring. Fold in the scrambled egg.

Makes (4) 3/4-cup servings

    I found this same recipe (with slight modifications) on recipezaar - Recipe #342129 - and we enjoyed it too.
