Stir Fry Stir Fry
Number of Servings: 4

Ingredients

    2 Chicken Breasts cut into strips
    1 Yellow Pepper chopped
    1 Red Pepper chopped
    1 Green Pepper chopped
    2 cups broccoli chopped or two crowns
    2 cups sliced fresh mushrooms
    1 cup sliced Onions
    3/4 cups (3-4 servings) Uncle Ben's Instant Whole Grain Rice

    Sweet and Sour Sauce
    1/3 cup rice vinegar
    1/3 cup packed light brown sugar or Splenda brown sugar blend
    3 tbsp's Ketchup
    2 tbsp's light soy sauce
    1 tsp Asian (dark) seasme oil
    1 tsp minced fresh ginger
    1 clove garlic, minced
    2 tsp's water

Directions

Spray Pam in a large frying pan or wok, and combine chicken, onions and mushrooms. Fry until chicken is cooked through.

Meanwhile for the sauce:
In a small bowl, combine the vinegar, brown sugar, ketchup and soy sauce
In a small saucepan, heat the oil. Add the ginger and garlic; cook until fragrant, 30 seconds.
Add the vinegar mixture and bring to a boil; boil 1 minute.
Meanwhile, dissolve the cornstarch in the water; stir into saucepan. Return to a boil and cook until mixture is thickened, 1 minute longer.

Add remainder of vegetables to the chicken and cook until heated through.
Add sauce mixture to stir fry and cook for 5 minutes.

Cook rice according to directions.
