Introduction

a cross between enchiladas and lasagne... a cross between enchiladas and lasagne...

Ingredients

    1lb extra lean ground beef
    Onion powder
    Cumin
    Chili
    1 can diced tomatoes
    1/3c salsa
    1 can black beans
    1 jar roasted bell peppers (or 2 large bell peppers, chopped)
    5oz lowfat cheddar cheese
    6 regular size (6in diameter) corn tortillas

Directions

Brown ground beef with onion powder, cumin, and chili. Add can of tomatoes. Cook off some liquid. Layer all ingredients in casserole. Cook at 350 for 45min (35 covered, 10 uncovered).

Serves 4 BIG servings (~550cal) or 6 small servings (~375cal).
