Ingredients

    2 tablespoons canola oil
    1 tablespoon grain mustard
    2 tablespoons caraway seeds
    1 tablespoon garlic powder
    1 tablespoon salt
    2 tablespoons black pepper
    5 pounds pork roast
    3 medium onions
    1 cup beer
    1 tablespoon corn starch
    2 tablespoons butter

Directions

Combine oil, mustard, caraway seeds, garlic powder, salt and black pepper. Mix into paste and rub mixture on pork roast. Let sit for 30 minutes. Heat oven to 375 degrees. Slice onions and lay in bottom of heavy roasting pan. Place roast fat side down. Pour beer around the roast. Cover with foil or lid and bake for 1 hour. Remove foil and turn roast over to fat side up. Score fat and return to oven for 2 more hours or until internal temperature reads done. Let rest for 20 minutes before slicing. While resting, pur pan juices in saucepan and bring to a boil. Make a slurry with the cornstarch and add to gravy. Bring to low boil and cook until thickened. Add butter to finish.
