Introduction
The original recipe calls for 2 cups vegetables which I didn't calculate and also called for 1/4 cup Parmesan of which I didn't add to my pizza. Ingredients

1 pkg. active dry yeast
1 1/3 c. lukewarm water
1/3 c. dried instant potatoes
1 T. brown sugar
1/2 t. salt
1 T. oil (I used Wildtree Basil Grapeseed Oil)
1 egg or 1/4 c. liquid egg substitute
3 1/2 c. flour
Cornmeal to dust pan
1 1/2 c. pizza sauce ( I used my homemade marinara sauce I canned last year because I ran out of pizza sauce.)
2 c. sliced vegetables for topping
4 oz. mozzarella cheese, shredded
Directions
Mix yeast and water together in a large mixing bowl.
Add potatoes, brown sugar, salt, oil and egg, mixing well after each addition.
Use a dough hook to mix in flour; process until mixture is smooth.
Spray a 15-inch by 8-inch baking pan with nonstick cooking spray and dust with cornmeal.
Pour or scrape dough onto the pan and use a fork to spread dough over bottom and up the side of the pan. ( I used my fingers and knuckles sprayed with nonstick spray to do this. I also used a larger pan. 17 x 12)
Cover and put in a warm place for 15 minutes.
Top with pizza sauce, topping and cheeses.
Makes a good size serving. Leftovers are going to be my lunch this week.
