Ingredients

1 cup oats
1 cup flour
2/4 cup Splenda
1/4 cup brown sugar
2 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
3/4 cup low fat buttermilk
2 egg whites, lighty beaten
2 Tbsp. unsweetened applesauce
2 Tbsp. vetable oil
1 ½ tsp. almond extract
1 cup frozen sweet cherries chopped (do not thaw)
Directions
Preheat oven to 400 °. Grease or line with papers a 12 cup muffin tin.
Using a wire whisk, combine oats, flour,sugar,splenda,baking powder,soda and salt in a large bowl. Mix the buttermilk and egg whites add extract and applesauce and the oil in a small bowl, mix well. Add wet ingredients to the dry ingredients. Stir than fold in the cherries.
Spoon the muffin mix into prepared pan. Bake for 18-20 minutes.
