Number of Servings: 3

Ingredients

    1 15oz can Diced tomatoes
    1 Tbsp white distilled vinegar
    1 tsp Splenda (sugar if you must add the calories)
    1/4 cup of V8 or vegetable juice (4 Tbsp Ketchup if no V8)
    2 cups of cooked long grain white rice (It's a Southern tradition - use your favorite if you must! )



Directions

Add first four ingredients into a pot on the stove over medium high heat. Add salt and pepper to taste. (lots of pepper for me!)

When mixture begins to boil reduce heat to simmer, stirring occasionally.

Cook rice. In the time it takes to cook the rice (roughly 20 minutes) the tomatoes will be stewed and ready to serve over the rice.

Great with Oven Fried Tilapia or Boiled Shrimp!


Serving Size: Serves 3 evenly dividing the tomatoes over 2/3 cup of rice.
