Introduction

I reduced the oil to half of what the original recipe called for and substitued apple sauce. I reduced the oil to half of what the original recipe called for and substitued apple sauce.

Ingredients

    1 3/4 cup flour
    1/3 cup sugar
    2 tsp. baking powder
    1/4 tsp salt
    1 egg beaten
    1/2 cup skim milk
    2 tbsp oil
    2 tbsp apple sauce
    1 cup mashed banana
    1/2 cup walnuts

Directions

Preheat oven to 400 degrees. Stir together flour, sugar, baking powder and salt in a large bowl, make a well in the middle. In a smaller bowl mix together egg, milk, oil and applesauce and pour into the well of the dry ingredients gently stir until moistened. Stir in bananas and walnuts. Spoon equally into muffin cups and bake for 18-20 minutes. Makes 12 regular size muffins. May make 6
jumbo muffins allowing for a slight increase in baking time ( a minute or two). You may also stir in mini chocolate chips in addition to the nuts or in replacement of them. Keep in mind this will alter your nutritional value. Enjoy.
