Introduction

These are a yummy substitute for those on a low-carb or gluten-free diet. They are a hit with my kids. These are a yummy substitute for those on a low-carb or gluten-free diet. They are a hit with my kids.
Number of Servings: 7

Ingredients

    3 lrg eggs
    3.5 T butter
    4 T half and half
    1/2 c water (more or less, depending on desired consistency)
    1 t baking powder
    1 t vanilla extract
    1 dash salt
    1 t honey
    1/2 c coconut flour

Directions

In a bowl, mix the eggs, 3 T of melted butter, half and half, vanilla extract, and honey. Stir in the baking powder, salt, and coconut flour. Add in the water. Melt the 1/2 T of butter in a frying pan and drop in batter to make 7 pancakes. (I use a soup spoon to measure each pancake.)

Serving Size: makes 7 4 inch pancakes
