Ingredients

    1/2 TB olive oil
    1 TB reduced fat shredded cheese
    4 large egg whites
    1 large egg
    1 TB Tastefully Simple Corn Black Bean Salsa
    salt, dash
    1 tsp pepper

Directions

Heat oil in non-stick skillet. Stir salt & pepper into eggs. Add egg mixture to pan, cook until beginning to set. Stir/scramble until done to likeness. Tops with cheese and salsa.

Enjoy with a side of fruit (i.e., strawberries, blueberries, etc)
