Introduction
This was created to satisfy a bread need for a current Dukan diet-ite, thus the soy flour which has a strong aroma, but may take some getting used to. However, if you are looking for a low-carb, low fat muffin, this works. Ingredients

250 g soy flour
1 egg
1c low fat cottage cheese
1/4 c milk
1c grated carrots
1 tbsp coriander
1 tsp baking soda
1 tsp baking powder
2 tsps cinnamon
1/2 tsp salt
Pepper and dried chilli pepper to taste
Directions
Pre-heat oven to gas mark 5, 350f, 180c
Peel and grate carrot.
Stir in egg with carrot.
Stir in coriander
Stir in cottage cheese and milk.
In a separate bowl, sift soy flour and remaining ingredients.
Add dry ingredients to carrot mixture and thoroughly combine.
Line muffin tin with cupcake liners.
Spoon dough into the tins to create 12 muffins.
Bake for 20 to 25 minutes.
Serving Size: Makes 12 muffins
