Ingredients
-
2 cups black beans
1/4 cup extra firm tofu (could eliminate and add different bean)
1 large egg
1/4 cup lowfat milk
1/2 cup whole grain flour
1/2 cup whole grain bread crumbs or oats
season of choice
*Can add these vegetables as well but not included in nutrition facts
-Mushrooms chopped
-Carrots Shredded
-Corn
-Spinach
-Whatever you can think of
Directions
1. Get out that blender/food processor
2. Add beans, tofu, vegetables, egg and milk and season
3. Blend until thick consistency
4. Add flour and bread crumbs/oats and mix until doughy texture achieved
5. Heat up stainless steel skillet with 1 tablespoon canola oil in it (may need to add more but its a start)
6. Roll and flatten with hands or drop and spread with spoon onto hot pan and cook about 2-3 minutes each side
7. If using cheese, melt on top, serve on lightly toasted whole grain bread with favorite burger fixings
Serving Size: Makes 8- 4 inch diameter patties
