Ingredients

    2 cups of mixed dry beans
    8 cups water
    onions
    carrots
    garlic
    bell peppers
    4 servings of lean, Jennie-O smoked turkey sausage (8 oz.)
    1 can tomato sauce
    cumin
    chili powder
    salt
    pepper
    other spices to tast

Directions

Soak beans overnight in 8 cups of water. In the morning, drain and rinse beans, add 8 cups fresh water. Bring to a boil and then lower heat and simmer for 90 minutes. Chop onion and saute in Pam or olive oil spray. Add carrots, bell peppers, garlic. When soft, add to beans. Saute sausage, add to beans. Add tomatoes and spices, heat, stir and serve!
