Introduction

Great for a hearty breakfast to start the day or a quick and easy dinner. Similar to baked beans really, except with an indian style. Great for a hearty breakfast to start the day or a quick and easy dinner. Similar to baked beans really, except with an indian style.

Ingredients

    Olive oil
    4 small lean spicy sausage (eg chorizo)
    400g can Lentils
    400 g Craigs Indian Style tomatoes (label says it contains onion, curry spices (including chilli), salt, garlic, mustard seeds.)
    4 eggs
    2 Tblspn parsley or coriander.

Directions

Fry sausages in oil, add lentils and indian tomatoes, make hollows and break each egg into. Place under grill to finish.

Garnish to serve. Side of crusty bread or salad.
