Ingredients

4 chicken legs (whole leg or maryland)
50g cold butter, diced
Juice 1 lemon
1 Tble rosemary leaves
4 cloves garlic, roughly chopped
2 nashi, cored & quartered
2 Tbl balsamic vinegar
150g baby rocket, to serve
Directions
Place chicken, skin side up, in a shallow glass or ceramic dish. Dot chicken with the butter. Drizzle with the lemon juice and scatter with rosemary and garlic. Cover and refrigerate for 3 hours or overnight to marinate.
Preheat oven to 180C. Line a roasting pan with baking paper. Place chicken, skin side up, in prepared pan and season well. Bake for 50 minutes, until chicken is brown.
Place nashi and vinegar in a bowl and toss to coat. Place nashi aroud chicken in roasting pan. Bake for another 20 minutes until nashi softens and chicken is golden and cooked through.
Serve with baby rocket.
Serving Size: Serves 5 as dinner without vegetables
