Ingredients

    1/2 cup brown sugar
    2 tsp packets of Truvia
    1/2 cup unsweetened applesauce
    1 chia egg (1 tbsp chia seeds + 3 tbsp warm water)
    1.5 tsp. vanilla extract
    1 cup white whole wheat flour
    1 tsp. baking soda
    1/2 tsp. salt
    1 tsp. cinnamon
    1 cup quick cooking oats
    1/2 cup dark chocolate chips

Directions

1. Preheat oven to 350 degrees.
2. Mix brown sugar, truvia, and applesauce in a large mixing bowl.
3. Make chia egg (in a small bowl add 1 tbsp chia seeds & 3 tbsp of warm water, let sit for 5 minutes or until goopy egg consistency).
4. In a medium mixing bowl, stir together flour, baking soda, salt and cinnamon.
5. Add chia egg & vanilla to sugar mixture, stir well.
6. Stir flour mixture into sugar mixture until well combined. 7. Stir in oats, then chocolate chips.
8. Roll dough into tsp-sized balls and place 2 inches apart on ungreased cookie sheets. Bake 10-12 minutes.

Serving Size: Makes 28 cookies (if dropped in tsp size before cooking).

    Very Good
    These were pretty good. I just used a reg. egg but did the rest the same. I like these because they are lower carb then most oatmeal cookies, and I still got to have chocolate...yum!!! They were really good though. - 11/19/11
