Introduction

Ingredients

    olive oil
    onions or leeks
    garlic
    asparagus
    eggs
    egg whites
    cheddar or feta cheese
    parmesan
    cherry tomatoes
    salt and pepper

Directions

Heat oil, add chopped onions and crushed garlic over medium heat, stirring frequently until tender. Allow to cool. Cook asparagus; drain and refresh under cold water and pat dry. Cut into 2 inch lengths. Lightly grease an 8" square baking dish. Beat eggs and stir in onions & garlic, asparagus, cheese, half the parmesan and salt and pepper. Put in pan and top with tomatoes (cut in half). Bake in preheated 375 degree oven for 25-30 minutes until puffed up and firm in the center. Allow to cool in the dish for 5-10 minutes.
