Introduction
These are delicious. Even folks that don't like sweet potatoes love these. They freeze very well (only need to heat about a minute in microwave). These are delicious. Ingredients

1 cup all-purpose flour
1 cup whole wheat flour
4 teaspoons baking powder
1 teaspoon cinnamon
2 tablespoons brown sugar
pinch nutmeg
2 cups milk 1 %
4 tablespoons unsalted butter, melted
2 whole eggs, large
1 sweet potato, peeled, cooked tender & well mashed
Directions
Begin preheating a pancake griddle over medium-high heat about 5 minutes before starting to cook the pancakes. when cooking reduce to medium to medium-low heat.
In a large bowl combine all the dry ingredients together, stir well. In another bowl whisk together all the wet ingredients.
Combine the two, stirring until just well blended.
Oil the griddle with a little canola oil with a brush between each batch of pancakes.
Extras can be cooled on waxed paper. Then stacked with the paper between them, placed in ziploc freezer bag & frozen.
Serving Size: Makes 15 six inch pancakes
