Ingredients

    4 Chicken breasts, skinless, boneless
    2 Scallions or 1 shallot, sliced thin or chopped fine
    1 Garlic clove, chopped
    1/2 cup balsamic vinegar
    1/2 cup chicken stock
    2 tablespoons honey
    Salt
    Pepper
    Bacon salt
    Flour

Directions

If chicken breasts are thick, pound them a bit flatter. Salt, pepper and bacon salt the breasts. Sprinkle each with flour, shaking of excess.

Using either butter or olive oil (your choice, your preference), brown butter or heat oil, then place chicken breasts in hot pan. Sautee for four minutes per side, until nicely golden in color. Remove from pan and let rest while you make the reduction.

Add scallions or shallot and garlic. Sautee until golden and add chicken stock, balsamic vinegar and honey. Scrape pan and cook until it's been reduced by half.

Plate your chicken and use sauce for dipping or you can pour it on top. This goes great with a salad (since we're supposed to be healthy here) or some garlic potatoes (oh wow!).

The sauce also can make a wonderful barbecue sauce if you add some spice to it!
