Introduction

Ingredients

    1 lb. parsnips
    1 lb. carrots
    2 yams, cubed
    1/4 c. maple syrup
    1 lemon, juiced
    1 orange, juiced
    1 T. olive oil
    salt and pepper to taste

Directions

Cut veggies into 1 inch pieces. Combine syrup, lemon juice, orange juice, and olive oil in large bowl; toss with veggies. Spread on baking pan and season with salt and pepper. Bake at 375F for 30 minutes, or till veggies are tender (but not mushy).

Serves 4 as a main dish, 8 as a side (nutrition info calculated for 8 servings).
