Introduction

A quick and filling soup that can be made and stored in the fridge for several days. Can also beef it up by adding other ingriedients such as meat and/or other veggies. Ingredients

    1/2 stick unsalted butter
    1/2 cup chopped onions
    1/2 cup diced celery
    1 cup fresh broccoli - chopped
    1 cup chopped cauliflower
    1/2 cup chopped carrots
    2 cups chicken broth
    1 can Rotel tomatoes - do not drain


Directions

Saute onions and celery in butter till opaque; add remaining ingriedients and simmer till carrots are tender. Can alter by adding other veggies if you like but account for them in the ingriedients.
