Ingredients

    Olive oil - 1 tbsp
    Cucumbers - 1 large - peeled and grated
    Tomatoes - 10 oz any size cut into wedges
    8 - 12 kalamata olives - pitted and sliced
    Italian herb seasoning, basil & coarse ground black pepper to taste.

Directions

Combine ingrediants and stir. Best if it sits a while before serving. Can add optional dill, salt, garlic or onions.

Serving Size: Makes 3 1-cup servings
