Introduction

Number of Servings: 8

Ingredients

    1.2 lbs 92% lean ground meat (chicken would work here, too)
    2 packets kroger low sodium taco seasoning
    1 medium chopped onion
    1 garlic
    2 Large Jalapeņos diced
    4 Roma Tomatoes diced ( I actually pureed them in the food processor)
    2 cups brown rice
    1 Cup of water
    1/4 cup minced cilantro

    Optional top with cheddar shredded cheese and a dallop of Sour cream

Directions

Cook rice as per instructions. I added 1 can of rotel tomatos, and 1 pack of taco seasoning, and diced jalapeņo peppers to rice mixture

Meanwhile brown and drain meat, add remaining ingredients, simmer for about 10 minutes. then turn it off and cover until rice mixture is done.

Once rice is done combine both pans and mix well.

Note: This could be easily a one pan/pot meal I was just too impatient to cook the meat first, them add the rice and wait an additional 45-50 min for it to get done
