Ingredients

5 egg whites
5 tbsp Splenda
1 tbsp unsweetened, dry powder cocoa
100 grams ground almonds
1 tbsp white wheat flour
A dash of salt
Directions
Beat eggs. Add salt, splenda and sifted cocoa before they are firm, and then finish beating.
Mix ground almonds with sifted flour. Slowly add this to the beaten whites, preventing volume loss. Once finished, pour into a baking pan prepared with margarine or butter and lined with baking paper. Cook in oven at 200°C until a crust forms on the surface.
Note: to add or maintain volume, you could work the egg whites with cream of tartar. I haven't tried this, but will adjust the recipe accordingly if I do.
Note 2: this is only an experimental recipe, so I've yet to fix the details. Adding some vanilla essence will probably make the flavor richer.
