Number of Servings: 36


    1 cup of margarine (2 sticks) softened
    1 1/2 cups sugar
    2 eggs
    1 tsp grated lemon peel
    3 1/4 cups of all purpose flour
    3/4 cup slivered almonds (or chopped)
    1 tsp baking powder
    1/2 tsp salt
    1 (12 ounces) jar strawberry preserves


In a large mixing bowl, cream the butter and sugar. Add eggs, one at a time, beating well after each one. Beat in the lemon peel. Combine 3 cups of flour, almonds, bkaing powder and salt; gradually add to the creamed mixture until it resembles coarse drumbs. (do not over mix.)

Set aside 1 cup of dough. Press the remaining dough into a greased 13x9 inch baking pan. Spread the preserves to within a 1/4 inch of the edge. Combine the reserved dough with the remaining flour; sprinkle over preserves.

Bake at 350 degrees for 25-30 minutes or until lightly browned. Cool on wire rack and cut into bars.
