Ingredients

    4 pork loin chops, about 1 1/2 inches thick
    4 t Extra Virgin Olive oil
    Salt and Pepper
    2 C cooked brown rice
    For Mango Salsa:
    1 ripe mango, peeled, pitted, and diced (about 1 cup)
    1/2 medium red onion, finely chopped
    1 Serrano chile, minced (include ribs and seeds for a hotter taste if desired)
    1/2 cup cucumber, peeled and diced
    2 tablespoons fresh cilantro leaves, chopped
    3 tablespoons fresh lime juice
    Kosher salt and pepper to taste

Directions

Combine all of the ingredients for the salsa in a bowl. Season to taste with salt and pepper. Refrigerate at least 30 minutes before serving.

Rub olive oil on both sides of each pork chop. Sprinkle with salt and pepper. Grill over medium heat 5 to 7 minutes per side or until desired doneness. Serve over rice and top with mango salsa. Garnish with a sprig of mint.

Serves 4 (1 pork chop, 1/2C rice + 1/4 salsa)
