Introduction

Great as a side dish, at a picnic, or as a meatless entree. Great as a side dish, at a picnic, or as a meatless entree.

Ingredients

    1/2 box Ronzini Pasta cooked and drained
    1/2 fresh jalapeno pepper, diced
    1/2 cup sliced scallions
    1 Plum tomato, diced
    1 can of Mexicorn, drained
    1 can of mushrooms, drained
    1 cup of black beans, drained & rinsed
    Juice from 1/2 lime
    3/4 cup Miracle Whip light
    3/4 cup Light Sour Cream
    2 Tbsp fresh cilanatro, chopped
    2 Tbsp Southwest or Chipotle Seasoning

Directions

Boil pasta to desired tenderness, drain, & set aside.

Cut up vegetables and cilantro and place in large bowl. Add corn, mushrooms, and black beans. Squeeze the half lime over the ingredients. Add pasta

In small bowl, combine seasoning, Miracle Whip, and sour cream. Mix thoroughly then add to large mixing bowl. Mix well and refrigerate until time to serve.
