Introduction

This is a great spring salad with edamame and manago. It's served cold and goes well with fish and chicken. This is a great spring salad with edamame and manago. It's served cold and goes well with fish and chicken.
Number of Servings: 8

Ingredients

    3/4 c. dry quinoa- Inca Red, cook as directed
    1 c. shelled edamame, cooked as directed and drained
    1 Mango, diced
    1/4 c. diced red onion
    1/2 c. diced red pepper
    2 T. shredded coconut
    1/4 c. cilantro, finely chopped
    2 T. light Balsamic Vinaigrette
    Juice of 1 lime
    2 T. Orange Juice
    Salt and Pepper to taste



Directions

1. Cook Quinoa as directed and let cool.
2. Cook Edamame as directed, drain and cool. Once cooled put into bowl.
3. Add mango, red onion, red pepper, cilantro and coconut to edamame.
4. In small bowl, whisk together balamic vinaigrette, lime juice, orange juice, salt and pepper. Add to edamame mixture.
5. Add edamame mixture to quinoa. Chill for 30 minutes before serving.

Serving Size: Makes 8 1/2 cup servings
