Introduction

This is a variation of the former recipe at Bertucci's. This is a variation of the former recipe at Bertucci's.
Number of Servings: 4

Ingredients

    7 oz. rigatoni
    8 oz. shelled edamame
    1 can diced tomatoes
    9 oz. artichokes
    1 Tbl. olive oil
    1 tsp oregano
    salt and pepper to taste
    Mrs. Dash is good if avoiding salt

Directions

cook the pasta until tender.
While it's cooking, fry the artichokes and edamame in the oil. You can put them in the frying pan straight from the freezer.
After 5 mins, add the garlic.
After another few minutes, add the tomatoes and herbs.
Let this cook until heated through.
Drain the pasta and add to the tomato and artichoke mix.
Serve with parmesian if desired.
