Introduction

This is not a low fat or calorie recipe. I'm putting it in to calculate the damage from eating 3 meatballs! (It is delicious, BTW!) This is not a low fat or calorie recipe. I'm putting it in to calculate the damage from eating 3 meatballs! (It is delicious, BTW!)

Ingredients

    * Bread, wheat (including toast), 5 slice
    * Milk, nonfat, 1 cup
    * Ground beef, lean, 32 oz
    * Garlic powder, 1 tsp
    * *Onion powder, 1 tsp
    * Salt, 1 tsp
    * Pepper, black, .25 tsp
    * Parsley, dried, 2 tbsp
    * Parmesan Cheese, grated, 1 cup
    * Egg, fresh, 2 large
    * Bread crumbs, dry, grated, seasoned, 2 cup
    * Egg, fresh, 2 large
    * Water, tap, .25 cup (8 fl oz)
    * *Canola Oil, 2 tbsp

Directions

Heat oven to 450.
Soak bread (without crust) in milk. Squeeze out. In large bowl mix the soaked bread with the ground beef, garlic, parsley, parmesan, 2 eggs and seasonings. Form balls (1.5 inches or so). Add cooking oil to the frying pan.
Get the pan really hot before adding the meatballs. The oil should splatter when you pop a drop of water in it. Dip meatballs in 2 eggs beaten with 2-4 tbs water, let excess drain off, roll in bread crumbs and add to pan. Fry about 2 minutes on each side, until well browned. Move to rack on baking pan. Place in hot oven for 15 or 20 minutes until the fat drains from the meatballs.
