Introduction
A simple European pancake recipe for flat pancakes using simple ingredients and with tons of flax. Possible toppings: syrup, fresh fruit or jam or for a russian twist add sour cream, make batter a bit thinner for crepes and fill with whipped creme and fresh raspberries and top with chocolate syrup. For savory meals fill with cooked veggies and cheese such as asparagus and melted velveta. You can add thinly sliced apples to the batter with a pinch of cinnamon for a variation. Ingredients

1.5 cups Milk, 5 Eggs, 1 cup Flour, 4 tbsp Flax meal
Directions
Mix milk and egg. Then add flour and vigorously beat with whisk or electric mixer until well combined. Repeat with ground flax. Let batter sit for at least 10 minutes, 20 minutes is ideal, in fridge or on counter so you don't get bubble holes in your pancakes.
Use a 1/2 cup ladle to get 8 pancakes. Cook until top of pancake is no longer liquid, then flip. Give it more time if the bottom is not a little golden. Lightly brown other side as well.
