Ingredients

    1 egg replacer (Ener-G, prepared according to instructions)
    1 C Soymilk (I used plain)
    2 T canola oil
    1 t vanilla (pure) extract or paste
    1/2 t salt
    2 t baking powder
    1 C flour
    cinnamon, to taste

    frozen unsweetened blueberries, fresh bananas, whatever you want

Directions

Make egg replacer and whip with whisk until frothy, mix together remaining ingredients (except fruit).

Drop onto hot griddle (non stick or sprayed w Pam or similar), when bubles appear, drop frozen blueberries individually onto the pancake and flip.

Serve with Earth Balance spread and pure maple syrup

Serving Size: Makes four pancakes or more silver dollars
