    5-6 cups rice cooked
    3 Chicken Breast boiled, skin and bone removed
    with onions and garlic
    1 pkg Broccoli Floret, thawed
    1 can Cream of Mushroom Soup, reduced fat
    1 can Cream of Chicken Soup, reduced fat
    1 can Broccoli Cheese Soup 98% Fat Free
    1 cup reduced fat Sour Cream
    1/4 cup reduced fat Mayo
    1-2 cups 2% milk (or as needed to make sauce smooth
    1 cup shredded Mexican blend cheese


Boil chicken breast with onions and garlic. Salt and pepper to taste. Remove chicken and use broth, with onions and garlic, to cook rice. Blend soups, sour cream, mayo, and most of the cheese(reserve some to sprinkle on top). Cut cooled chicken breast into cubes. Combine chicken, rice, and broccoli in large baking dish . Pour soup mixture over chicken mixture and combine. Add milk as needed to smooth out mixture. Bake at 350 for about 30-35 minutes or until heated through. Enjoy.
