Introduction
Healthy and incredibly fresh tasting. Can be used after grilling over sald or as meat for fajitas, etc. Could probably make without the 1 tbsp oil to make completely fat free! Ingredients
-
4 chicken breasts
1/4 cup lime juice (I used the pre-bottled)
1/2 cup cilantro, chopped
6 cloves garlic, chopped
1 tbsp agave nectar (or honey)
1 tbsp olive oil
1/2 tsp salt
1/4 tsp pepper
Prep time only takes 15 minutes but marinating should be anywhere from 30 minutes to overnight.
Directions
Pound thick side of chicken to even out slightly, do not pound thin.
Lightly poke chicken a few times with the knife to ensure marinade soaks in.
Place chicken breasts in large ziplock bag.
Mix rest of ingredients in a bowl then pour into bag. Mix well then place in fridge for at least 30 minutes to overnight.
When ready to cook, allow most of marinade to drip off chicken then place on grill or on grill pan under broiler.
Grill or broil chicken for about 6-7 minutes per side until just cooked and no longer pink.
Enjoy!!

I made this for dinner tonight and it was delicious. I added a jalapeno to the marinade for a little spice, but otherwise followed the recipe exactly. I served it with mexican white rice, black beans, and salsa. I was so happy while I was eating this! Thanks for the recipe. - 6/29/11
