Ingredients

4 cups mixed greens
1 cup chopped long english cucumber
1 cup chopped celery
3/4 cup chopped carrots
7 cherry tomatoes halved
1 green onion finley chopped
1/2 large red bell pepper chopped
Directions
Chop all vegetables into bite size pieces and mix together. Arrange lettuce on salad plates and top with chopped veggies. Serve with your favorite light dressing or an oil & balsamic vinegar dressing.
