Ingredients

1 large Salmon fillet
1 cup Brown Rice
1/2 cup Mushrooms sliced or chopped
1 cup Scallions chopped
1 cup cherry tomatoes
1/4 cup red sweet pepper chopped
1 tbsp Olive Oil
2 tbsp Red Wine Vinegrette- no fat
Directions
Precook brown rice according to instructions.
Sear 1 large Salmon fillet in dry skillet. Break up Salmon and add mushrooms. Add olive oil and cook till fish is done.
Mix scallions, tomatoes, cilantro and red peppers with Red Wine Vinegrette.
Place Rice on plate. spoon fish and mushrooms over rice and reheat. Spoon cold veggie salsa on top. Serve.
Serving Size: Makes 4- 3/4 cup servings
