Ingredients

12 oz. tri-color fusilli pasta
1/2 c. extra light olive oil
6 T. lime juice (3 oz)
2-3 T. chili powder
1 T. cumin
1 tsp salt
pepper to taste
3 cloves minced garlic
1 (15 oz.) can corn
1 1/2 cans (15 oz each) black beans/approx 2 cups
3/4 c. chopped red or orange bell pepper
3/4 c. chopped yellow bell pepper
1 1/2 c. chopped tomatoes (roma or cherry), seeds removed
3/4 cup fresh cilantro leaves, chopped
Directions
Cook pasta in boiling salted water for approx. 8 minutes/until al dente. Rinse with cold water and drain.
Mix dressing in large measuring cup: oil, lime juice, chili powder, cumin, salt, pepper, and garlic.
In large bowl, combine pasta, corn, black beans, peppers, tomatoes, and cilantro. Pour in dressing and mix well.
Serve chilled (best) or at room temperature.
