Ingredients

    2.5c flour
    0.5c sugar (or less to taste)
    1T baking powder
    1t salt
    1 stick cold butter
    .67 to .75 cups milk

Directions

Preheat oven to 425 and prepare a baking sheet with silpat or parchment

Mix dry ingredients in a bowl.
Cut in the butter as you would for biscuits
Use enough of the milk to get it to come together. You may need to use your hands to knead in the last bits of the flour depending on humidity.
Knead a couple of turns but not many. The dough should still look a little shaggy.
Roll and cut into scones or press into a scone pan. (I tend to get lazy, roll into a rectangle and cut into squares.

Bake 12 minutes

This is a great basic recipe. You can make any type of scone off it by adding what you want (fruit, flavoring) and adjusting the amount of sugar accordingly. (For example if you add raisins, cut the sugar in half.)
