Ingredients

    1 box Rice-a-Roni Garden Vegetable
    1lb chicken breast, cut into bite sized chunks
    2 cups frozen English Peas
    2 cups frozen whole kernel corn
    1 cup pepper jack cheese, cut up
    3 medium eggs
    1/2 cup 2% milk
    1 1/2 cup water
    salt and pepper to taste

Directions

Brown chicken in 1 tbls olive oil. Remove from pan. Prepare Rice-a-Roni according to instructions on box. Before bringing rice to a boil, add 1/4 cup milk, peas, corn, and chicken. Bring to a boil, cover, reduce heat and let simmer 15-minutes. Add raw eggs and scramble into rice mixture. Turn off heat. Add cheese. Cover and let sit about 5-minutes till cheese is melted. Stir and serve.
