Introduction
I find this tuna salad to be better and WAY more interesting than tuna with mayo. Since I cook for one, I make this in a tupperware large enough to mix it, but small enough not to take up a ridiculous amount of space (for instance, a wide, 1 quart round tupperware). Saves me time on immediate cleaning, and storing! The additions of the mustard, vinegar and pickle juice keep it moist, so unless you absolutely LOVE mayo, you won't even miss it!When apples are in season, I like to omit the carrots, and replace them with some minced Granny Smith Apples. In this version, I add extra apple cider vinegar. Sometimes I'll add minced pears too! I actually find the apple version to be even better than this one. Enjoy! Ingredients

1 can of tuna
1T apple cider vinegar
1T pickle juice
2T Grey Poupon mustard (my preference... I'm sure any spicy brown or dijon mustard would be just fine!)
.25 - .5 of a small onion, minced (depending on your taste)
1 - 2 cloves of garlic, minced (again, depending on taste)
2 small stalks of celery, minced
2 small carrots, minced
.25 of a small pickle, minced
salt and pepper, to taste
Directions
In a tupperware large enough to mix, but small enough to store in fridge add:
1 can of tuna fish, drained.
Break up tuna with a fork until all of it is uniformly small.
Add a dash of salt, and mix.
Add 1T apple cider vinegar, and mix.
Add 1T pickle juice, and mix.
Add 1T Grey Poupon mustard, and mix.
Add minced onion and garlic, and mix.
Add minced celery, and mix.
Add minced carrot, and mix.
Add minced pickle, and mix.
Add final 1T of Grey Poupon, a dash of pepper, and, you guessed it, mix!
Serve on a delicious piece of high-fiber bread.
