Ingredients

    3/4 c. whole oat oatmeal
    1 c. milk
    1 1/4 c. whole wheat graham flour
    1 1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/4 tsp. cinnamon
    1/3 c. walnuts
    1/3 c. splenda brown sugar blend
    1/3 c. canola oil
    1 large egg
    1 medium banana mashed

Directions

soak oatmeal and milk in a small bowl for 30 minutes. In a medium bowl mix flour, baking powder, baking soda, cinnamon, and walnuts together. In a large bowl, mix splenda brown sugar, oil, egg, and mashed banana. When oatmeal/milk mixture has soaked long enough, add to the banana liquid mixture. Stir in flour mixture just until mixed. Do not overmix. Spray 12 paper lined muffin cups with PAM and fill with batter. Sprinkle about 2 Tbsp. oats on top of muffins. Bake at 425 degrees for 11 - 15 minutes. Makes 12 muffins.
