Ingredients

Use large package of prewashed spinach.
1 c. low salt chicken broth
1.5 c. cooked brown rice (cooked in other cup of chicken broth)
1 Tbs Mushroom soy sauce (Asian market- very inexpensive)
5 egg whites or a cup of egg whites in a carton
Stir in a few shakes of Chinese 5 Spice for slightly sweet emphasis.
Directions
Over medium high heat, in a non-stick skillet, heat broth with package of spinach until wilted (about 8 minutes) add remaining ingredients, alternate between allowing eggs to set and releasing cooked egg from the bottom of the pan. This takes a while to cook off liquid. Change cooking utensil as egg cooks to have a clean utensil at finish.
Stir in a few shakes of Chinese 5 Spice for slightly sweet emphasis.
