Ingredients

    1/2 cup diced onion
    1/2 cup diced green pepper
    1/2 cup diced celery
    1 crushed bay leaf
    1 pound frozen shrimp, small, thawed
    1/4 olive oil
    2 cups instant rice (brown)
    2 cans (15 oz. each) tomato sauce
    2 tsp. sugar
    1 tsp. salt

Directions

Saute' onion, green pepper, celery, bay leaf and shrimp in oil for 5 minutes. Add rice, tomatoe sauce, sugar and salt. Bring to boil. Cover and simmer for 10 minutes
