Ingredients
-
4 large sweet potatoes
1 cup brown sugar unpacked
1/2 cup Granulated Sugar
1 cup chopped Walnuts
1/4 cup flour
8 tbsp salted butter
1 large egg
1/4 cup honey
Directions
Take your sweet potatoes and bake them for 1 hour, or until soft.
For the topping, in a small bowl mix 1/2 cup of brown sugar (unpacked), 1/2 cup of sugar, 1 cup of walnuts, and 1/4 cup of all purpose flour, and 4 tbsp of melted butter. Mix together until butter + ingredients are completely incorporated.
When sweet potatoes are done cooking, let cool for a few minutes, or use an oven mitten to help peel off the skin. Put the potato centers into a large mixing bowl, and mash. after smashed you can use a mixer to get rid of lumps (i personally love lumps). Add the rest of the brown sugar, 4 tbsp melted butter, egg, and 1/4 cup of honey.
Get a large casserole / brownie pan and spray with nonstick oil. Add the potato mix, and spread it out flat. Then sprinkle the topper on top evenly. Cover with foil, and bake for 15 minutes. Then take off the foil and bake for another 15 minutes.
