Introduction

Was searching for a different way for my family to eat chicken since we've eliminated red meat. I found this recipe but modified it to what I had and this is what I came up with. Ingredients

    Perdue Boneless, Skinless Chicken Breast, All Natural, 1 filet, 4.8 oz., 10 serving
    Spinach, frozen, .5 package (10 oz) yields
    mozzerella cheese, 0.5 cup
    *Garlic (1 clove), 5 serving
    turkey bacon, 10 serving

Directions

Preheat the oven to 375 degress F
Pound chicken tohalf inch thickness
Place your spinach in a large lass bowl and heat in the microwave for 3 minutes, stirring every minute until wilted. You can eliminate this process by just using frozen box spinach (it's already wilted). Stir in the sour cream, mozzerella cheese and minced garlic.
Lay the chicken breasts out on a clean surface,and spoon some of the spinach mixture onto each one. Roll up the chicken to enclose the spinach, then wrap each breast with 2 slices of bacon. Secure with toothpicks and arrange in shallow dish. Bake uncovered for 35 minutes in the oven then increast heat to 500 degress F or ue the oven's broiler to cook for an additional 5 to 10 mins to rown the bacon.
