Ingredients
-
1 slightly rounded cup vital wheat gluten; 1 medium carrot, peeled; one small (2oz) onion, peeled; 3 tablespoons nutritional yeast; 1 teaspoon each sea salt, basil and oregano; 2 tablespoons paprika and one tablespoon walnut oil.
Directions
Peel a medium carrot, and a small onion. With both the chopping blade and shredding blade in place, food-process onion and carrot. Remove shredding blade. Add vital wheat gluten, nutritional yeast, paprika, basil, oregano, sea salt and walnut oil. Process until well-mixed. Remove dough to a mixer and knead for five minutes, to further develop the elasticity of the gluten.
Roll dough out into a half-inch thick round. Cut out rounds with a biscuit cutter, glass, or tuna can. Place into a wok full of slightly salted, boiling water. When water comes to a boil, reduce heat, and simmer for up to 45 minutes. Remove to a cooling rack to drain. Refrigerate, or freeze.
For serving, pan-saute, or grill until heated through. Serve as with any burger. Garnish with mustard, ketchup, steak sauce, Sriracha...make yourself happy.
Makes 7 patties
